The name IO is composed of the letters of the exclamation used by the Bacchantes (Greek women who adored the god Bacchus, also known by the name Dionysus) to express their happiness, and also shouted by the crowds at triumphs and festivals. Aged for 12 months in lightly toasted French Allier oak barrels, with a maximum of three vintages per barrel. This wine is less complex than GNEIS, produced by the same cellar, due to its shorter maceration time in barrel. It reaches a peak of elegance with less time in the bottle.
